Lower-Carb Apple Topping or Apple Dessert!!

Came up with this recipe this morning, for a topping for my pancake sundae! It was delicious. This recipe is probably pretty versatile. Use it for topping a breakfast treat or just have a bowl with some yogurt or granola. Use your imagination!! This recipe is for about two servings for ONE person or one serving for two people. Adjust quantities to your preferences! I used Xylitol for my sugar substitute.
Ingredients:
1 apple (preferably a variety that is good for pie)
1/2 teaspoon lemon juice
1/2 teaspoon apple pie spice, pumpkin pie spice or 1/2 teaspoon cinnamon
1 tablespoon reduced-fat butter
1 tablespoon sugar-free maple syrup
1 tablespoon sugar substitute
1/4 teaspoon cornstarch
Directions:
1. Peel and Core apple and cut into small segments. Drop segments into a microwave safe bowl. Add the spice, butter and sugar substitute and mix thoroughly. Last add the cornstarch and mix until all the apple is coated. Heat in the microwave for about 2 or 3 min depending on your watts. And then waaalaaa, apple topping!
