Low-Sugar, Low Fat Peanut Butter Cookies

Ingredients:
1/2 cup applesauce
1/2 cup reduced fat peanut butter
1 cup splenda sugar blend for baking
1/2 tsp baking soda
1/2 tsp baking powder
1 egg, large
1/2 tsp vanilla
1 1/4 cup whole wheat flour
1/2 teaspoon ground pepper
Directions:
1. Heat oven to 375°.
2. Beat sugar, applesauce, peanut butter, and vanilla in a large bowl until creamy. Add eggs; beat well.
3. Stir together flour, baking soda, baking powder, and pepper; gradually add to sugar mixture, beating until well blended.
4. Drop by teaspoons onto ungreased cookie sheet. Bake 8-10 minutes or until lightly browned.
5. Cool slightly. Remove from cookie sheet to wire rack; cool completely.
