Ingredients:
15 apricots quartered
2 tablespoon(s) lemon juice
1 1/2 cup(s) white sugar
2 tablespoon(s) cinnamon optional
Directions:
1. Add ingredients to sauce pan. Bring to a full boil. Lower heat and simmer until jam is set. (Test by coating a teaspoon which has been sitting in ice water. If it firms up quickly it is set. If not, cook longer. If necessary, add some low sugar pectin.)
2. Add jam to sanitized jars. Freeze until ready to use.
