Low Sodium Beef Lentil Soup

Being sodium sensitive, I find this is a nice alternative to the typical beef lentil soup.
Ingredients:
1 quart water
1 lb 96% lean ground beef
46 ounces low-sodium tomato juice
1 cup dry lentils
2 cups green cabbage
1 cup carrot
1 cup celery rib
1 cup yellow onion
1/2 cup green pepper slices
1/2 teaspoon black pepper
1/2 teaspoon ground thyme
1 bay leaf
Directions:
1. Brown beef.
2. Shred cabbage, slice carrots, celery ribs, and chop yellow onions.
3. Add all ingredients into a large stock pot.
4. Bring to boil.
5. Reduce heat and simmer uncovered for 1 hr or until lentils and vegetables are tender.
6. Remove bay leaf before serving.
