Low Gi Peanut Butter Muffins

These muffins are delicious and are a great for diabetics.
Ingredients:
3 oz of brown flour
1/2 oz yacon
1/2 oz milled chia.
1 oz of peanut butter
100 ml coconut oil.
2 eggs.
1/2 oz of agave nectar
1/2 oz of banana
2 oz of raw cane sugar.
teaspoon of baking soda
Directions:
1. Mix all dry ingredients together in a bowl ( yacon,flour,chia,baking,powder)
2. In a separate bowl combine the oil,bananas,peanut butter,sugar and agave nectar.
3. Slowly add the eggs to bowl of wet ingredients whisk as you add.
4. Then fold dry ingredients into wet with a spoon
5. Fill muffin cases half way and bake in a preheated oven for 20 mins at 190/375.
