Serve this dressing with salad, sliced tomatoes, or a seafood salad. Each tablespoon has about 12 calories
Ingredients:
1/3 cup low-fat mayonnaise
2 tbsp. ketchup
2 tbsp. fresh lemon juice
2 tbsp. minced red bell pepper
1 tbsp. minced onion
1 tbsp. minced flat leaf parsley
1 tbsp. sweet pickle relish
pinch of cayenne
1/4 cup water
Directions:
1. In a blender or food processor blend all ingredients and salt to taste until smooth, slowly adding up to 2 tbsp. of additional water if necessary to thin to desired consistency.
2. Dressing keeps covered and chilled for 1 week. Makes about 1 cup.
