Low-fat, sugar-free vanilla cupcakes
Ingredients:
1/2 cup non-fat vanilla yogurt
2/3 cup skim milk
1/4 cup applesauce
3 tablespoons canola oil
3/4 cup splenda sugar substitute
1 1/2 teaspoons vanilla extract
1 1/4 cups all-purpose flour
2 tablespoons cornstarch
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
Directions:
1. Preheat oven to 350 degrees.
2. Mix wet ingredients.
3. Sift in dry ingredients.
4. Fill cupcake liners three quarters full with batter.
5. Bake for approximately 25 minutes.
6. Cool completely.
