I have JUST eaten this, I made it out of next to nothing, just things I had in. It is low fat - Skinny Cow Hot Chocolate Powder and Skimmed Milk, no Butter etc... And it tasted great! Makes a 3x8 rectangular tray. Crispy on the outside but moist inside it is like a brownie cake... though not quite as good!
Ingredients:
1 cup flour
1/2 cup icing sugar
1 pinch baking powder
5 tablespoons of skinny cow hot chocolate powder
2 eggs
3 tablespoons milk
1 tablespoon water
1/2 cup icing sugar
3 tablespoons of skinny cow hot chocolate powder
1 drop peppermint extract
Directions:
1. Blend flour, 1/2 cup hot chocolate powder and icing sugar together.
2. Beat in the eggs. Add the milk and water (you might need a little extra milk if the mixture is too thick, should be the consistency of an average cake mix.
3. Pour into a tray and bake in the oven on 5 for 15-20 minutes, until you can put a fork into the cake and feel it is firm.
4. In another bowl, or jug, mix 1/2 cup of icing sugar with 3 tablespoons of hot chocolate powder, add a few teaspoons of warm water and stir to make a very light icing syrup, add a drop of peppermint flavouring for that extra kick.
5. Serve both together and enjoy a low in saturated fat dessert, or late night snack.
