Low Fat Roasted Garlic Potatoe Soup

Great soup on a cold day. A kid favorite! You can thicken this soup by adding cauliflower!
Ingredients:
1 cup onions (chopped)
5 cups potatoes (chopped)
1 chicken bouillon cube (knorr)
2 vegetable bouillon cubes (knorr)
2 garlic cloves
1/2 tsp olive oil
1/2 tsp salt ( sea salt)
1/2 tsp pepper (ground)
6 cups water
4 cups milk (1%)
8 cloves garlic (roasted)
Directions:
1. Spray Pam olive oil or 1/2 tsp olive oil in pot.
2. Add onions and 2 garlic cloves. Cook for 5 minutes on medium heat.
3. Add 6 cups of water and bouillon cubes and potatoes. Cover and cook on medium heat for 25 minutes.
4. Add salt, pepper and milk. Cook for another few minutes.
5. Add roasted garlic.
6. With hand blender, blend the soup until creamy.
7. Serve hot.
