Low Fat Rise and Shine Cranberry Muffins

These muffins are delicious and very healthy. They are low in fat and packed with goodness. The kids Love them. You can substitute the frozen cranberries for any frozen fruit such as blueberries, black berries, strawberries or any combination. The trick with these muffins is when you make your Orange Juice, don't dilute completely so to make it stronger! Adds taste without adding too many calories! Individually Freeze and pop in microwave when ready for a healthy snack/breakfast.
Ingredients:
4 cups whole wheat flour
3/4 cup brown sugar
3 tsp baking soda
1 tsp salt
1 1/2 cups quick oats (not instant)
1/2 cup wheat germ
4 egg whites
1 1/2 cups orange juice
1 1/2 cups milk
1 1/4 cup unsweetened apple sauce
2 cups cranberries (frozen)
Directions:
1. Preheat oven to 375 f.
2. Lightly coat muffin tins with Pam Olive Oil spray.
3. In large bowl combine flour, brown sugar, baking soda and salt. Mix well.
4. Add quick oats and wheat germ. Mix well.
5. In a medium bowl, add eggs, orange juice, milk and apple sauce. Mix well.
6. Add frozen berries to dry mixture.
7. Pour liquid mixture into the dry mixture.
8. using rubber spatula stir the batter to combine. Do not overmix or the muffins will have a tough texture.
9. Spoon into prepared muffin tins and bake for 20-24 min.
10. Enjoy!
11. Individually wrap once muffins are fully cooled. Stick in freezer.
