Low-Fat, Lower-Sodium Beef and Vegetable Chili

This healthy 7-quart crock pot meal can be prepared the night before and cooked on a low setting for 9-11 hours the day of consumption.
Ingredients:
21 servings (8 cans) del monte tomatoes, no salt added
6 servings bush's white cannellini beans
3 1/2 cups bush's seasoned regular black beans
3 1/2 servings (1 can) del monte whole kernel corn, no salt added
8 tbsp mccormick low-sodium chili seasoning
1 medium raw yellow onion, diced
1/2 large green bell pepper
3 portions lean ground beef (93%/7%, then fat drained)
2 tbsp chili powder
4 servings red pepper
4 tsp tabasco sauce
Directions:
1. Begin by browning the ground beef: Heat stove burner to medium or med-high heat. Let frying pan warm on stove and, when hot, place raw ground beef in pan. (The leaner, the better!) Stir and break up the ground beef using a spatula for 15 minutes, or until meat is entirely browned. Drain any excess fat or grease. Leave browned beef in skillet to the side.
2. Prepare vegetables: Dice one yellow onion and 1/2 a green pepper. Leave on cutting board or set in a bowl to the side.
3. Prepare by adding each of the following to 7quart crock pot (or container if storing overnight): 6 cans of diced, no salt added tomatoes (WITH juice); 2 cans of DRAINED black beans; 2 cans of DRAINED white beans; 1 can of whole kernel corn, no salt added; yellow onion and bell pepper (diced); and, 2 packets low-sodium chili seasoning.
4. Mix all items well, gradually adding the drained ground beef.
5. Add seasonings (chili powder, crushed red pepper and Tabasco sauce) to taste, and mix contents well.
6. If preparing an evening in advance, cover refrigeration-safe container and store overnight.
7. On the day of consumption, pour contents into crock pot. Let cook on Low setting for 9 - 11 hours.
8. EAT UP! :) (Suggested side items: Corn Bread or wheat toast. If you really feel like splurging, try some honey cornbread! Krusteaz makes a fat-free mix that ruins the low sodium goodness (i146510), but tastes great. A salad also makes a great addition!)
