Yummy Quiche with lots of flavor and vitamins
Ingredients:
1 cup egg beaters
1 cup egg whites
1 cup skim milk
3 cups spinach, cooked, chopped
1/2 cup reduced fat cheese, shredded
1/2 cup sliced mushrooms
170 g roasted vegetables
1/2 cup cherry tomatoes, sliced
1/2 cup fat free sour cream
1 slice bread, cubed
Directions:
1. Beat eggs, milk, sour cream
2. Stir all other ingredients into egg mixture
3. pour into large pie plate
4. Bake at 350 for about an hour
