Low-Fat Linguine with Tomatoes and 'Cream'

This is incredibly rich-tasting!
Ingredients:
2 teaspoons olive oil
1 cup chopped onion
1 clove garlic, minced (or more)
1 (1 lb) can stewed tomatoes
1 teaspoon dried basil
1/8 teaspoon pepper
1/2 cup evaporated skim milk
8 ounces linguine
3 tablespoons grated parmesan cheese
Directions:
1. Heat oil in a large nonstick skillet over medium heat.
2. Add onions and garlic.
3. Cook 5 minutes, stirring frequently.
4. Add stewed tomatoes, basil, and pepper; bring to boiling.
5. Reduce heat to low and simmer, uncovered, for 10 minutes.
6. Stir in milk and continue to simmer 5 minutes more.
7. While sauce is cooking, prepare linguine according to package directions; drain.
8. Add cooked linguine to tomato mixture, along with parmesan cheese.
9. Toss until pasta is coated with sauce.
10. Serve.
