Low Fat Lemon Poppy Seed Muffins

A low fat/ low sugar version of everybody's favorite muffin. This muffin is very moist and the lemon flavor is perfect -not too powerful but you know its there.
Ingredients:
2 cups flour
1/4 cup sugar
1/2 cup splenda
1/4 cup poppy seeds
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 eggs
6 oz lemon yogurt
1/4 cup sour cream
1/4 cup applesauce
1 tablespoon lemon rind
1/3 cup lemon juice
3 tablespoons sugar
Directions:
1. Mix flour,sugar,splenda, baking powder, baking soda, and salt together.
2. In a seperate bowl mix eggs, yogurt, sour cream, applesauce and lemon rind together.
3. Pour egg mixture over dry ingredients and mix together until just blended. DO NOT OVER MIX!!!!
4. Spoon into 18 muffin cup that have either beeen sprayed or have liners.
5. Bake at 400 for 15 minutes or until done.
6. Fork cooked muffins. Mix lemon juice and 3 Tbsp of sugar together. Pour approx. 1 tsp of mixture unto each muffin.
7. Let stand 10 minutes and remove from pan.
