Fairly low carb and fat
Ingredients:
8 oz. pasta, lasgna
2 cups tomato sauce
1 lb. ground beef, 97 % fat free
1/8 eggplant, sliced
8 oz. mushrooms, sliced
1/2 cup ricotta cheese, fat free
1 egg
2 tbsp. parmesan cheese
3/4 cup mozzarella cheese, shredded
Directions:
1. Prepare sauce, with meat, tomato sauce, mushroom
2. Mix together ricotta, 1/2 of mozarella, egg (beaten) and parmesan
3. Prepare pasta
4. Once ingredients are prepped, put together in layers, beginning with tomato sauce, then pasta, more sauce, ricotta, mushroom, mozarella, then begin a layer with eggplant, and rest of ingredients
