Ingredients:

Directions:

  1. Drain lima beans and rinse
  2. Place in food processor, along with the peas, 1 1/2 avocados, lemon juice, sour cream, salt and peppers.
  3. Process until smooth
  4. Spoon into a bowl.
  5. Stir in remaining cubed avocado
  6. Stir and mash with a fork until mostly smooth
  7. Stir in tomatoes, jalapeno and cilantro
  8. Serve immediately, or refrigerate until ready to use.
  9. NOTE:
  10. You can serve this as a dip, but there are other ways of using it.
  11. It makes a great sandwich spread with cooked chicken or turkey.
  12. You can top hot tomato soup with it, or use it as a topping for grilled fish or chicken.
  13. It is also delicious in layered dips.
