Low Fat Fruity Balsamic Vinaigrette

I make currant jelly every year but it turns out to be syrup. This is a great recipe to use that jam or jelly that doesn't set up.
Ingredients:
1/2 cup balsamic vinegar
1/4 cup currant jelly (or raspberry, cranberry, blueberry, cherry preserves)
2 tablespoons olive oil
2 tablespoons water
2 teaspoons dijon mustard
1 garlic clove, minced
1/8 teaspoon salt
pepper, to taste
Directions:
1. Whisk all ingredients together in a small bowl except for salt and pepper. Season to taste. Serve over your favorite salad greens.
