Low-Fat French Toast

This is a modified recipe. This version is low-fat and I include my substitutions to make it even healthier without sacrificing taste. I use Aunt Millie's 12 Grain bread.... a slice has 6g of fiber, and no high fructose corn syrup! This only a single serving, and it's sweet so you don't need syrup. You can bake this as well!
Ingredients:
2 egg whites
1/4 cup milk (soy milk)
2 tablespoons flour (whole wheat)
2 tablespoons sugar (evaporated cane juice)
1 teaspoon vanilla
1 teaspoon cinnamon (i use way more than that)
1/4 teaspoon salt (sea salt)
1 tablespoon oil (canola or vegetable for frying)
2 slices bread (whole grain, if you have leftover batter, use more!)
Directions:
1. Heat a frying pan to medium.
2. Whip all ingredients except oil until very well blended.
3. If you're using white bread, dip bread slices in batter, fry with oil on both sides until done.
4. If you're using whole grain bread, soak slices in batter for a few minutes, and then fry with oil on both sides until done.

6. The oil can be mixed into the batter, and baked on a sprayed pan.
7. Bake at 350 degrees, 30 minutes. Flip the slices half way through.
