This cake is very high in fiber and iron. It is really good for you, makes you feel good, and tastes good which is always a plus.
Ingredients:
3 bananas
2 eggs
1/4 cup molasses
2 teaspoons vanilla extract
3/4 cup corn syrup
1/4 cup sugar
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1 cup whole wheat flour
1 cup white flour, unbleached
1/2 cup cocoa
1/2 cup wheat bran
3 teaspoons baking powder
1/4 teaspoon salt
Directions:
1. Preheat oven to 350 degrees.
2. Combine wet ingredients and spices.
3. Sift together dry ingredients.
4. Combine wet and dry ingredients until smooth.
5. Pour into a greased 8x8 inch glass baking pan.
6. Bake for 30 minutes or until toothpick inserted comes clean.
