Ingredients:
1 1/2 cup wheat bran
1 1/2 cup carrot
1 large apple
1/2 cup egg whites
1 cup milk
1 cup whole wheat flour
2 tsp. baking soda
1 tsp. salt
1 cup raisins
Directions:
1. mix bran and milk together and let sit 10 min. grate carrots and apple, add to bran-milk mixture. add egg whites to mixture.
2. stir together flour baking soda and salt add 2 tbsp. splenda(no calories) sugar substitute. add raisins to flour and break them up. add dry ingredients to wet and mis. spray muffin tins with non stick spray and add muffin mix dividing batter evenly. other dried fruit may be used in place of raisins. Bake at 375 for 20-25 min. Cool and remove from pan onto wire rack.
