I changed the original recipe ingredients to try to make these a better treat on the Weight Watcher's plan. The only sugar substitute I use is Splenda, I do not know how much to use of other substitutes.
Ingredients:
4 eggs
1 cup sugar
1 cup sugar substitute
1 3/4 cups applesauce
1/2 cup water
1/2 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
1 cup white flour
1 cup wheat flour
3 cups grated carrots
2 tablespoons butter
3 ounces low-fat cream cheese, softened
1 teaspoon vanilla
1 3/4 cups powdered sugar
Directions:
1. Beat the eggs, add the sugar, applesauce, and water. Mix well. Add the salt, cinnamon, and flours. Mix well, add the carrots and mix well. Pour into a greased 10 x 15 pan. Bake at 350 degrees for 20-30 minutes, until a toothpick inserted in the middle comes out clean. Cool completely.
2. Beat butter and cream cheese until smooth. Add remaining ingredients and mix well. Spread over the bars.
