This is a wonderful, light, low fat version of Caesar Salad dressing! Always a hit!
Ingredients:
2 tbs light mayo
1 tbs lemon juice
1 tsp anchovy paste
1/4 tsp worcestershire sauce
1/4 tsp dijon mustard
3 tbs evoo
1/2 cup grated parmesan cheese
2 cloves garlic, minced
kosher salt and fresh cracked pepper to taste
Directions:
1. Combine all ingredients in blender or food processor. Serve over romaine lettuce with whole wheat croutons.
2. *This quantity will serve 4, small, side salads, or two dinner-sized salads. Add grilled or rotisserie chicken for a more hearty meal.
