This recipe is my own creation. I suggest using WaterMelon's reduced fat baking mix (Low Fat Bisquick Substitute). Applesauce can be substituted for the butter, if desired, but I prefer the results of butter or margarine. Thanks, WaterMelon.
Ingredients:
1/2 cup butter, softened or 1/2 cup margarine
1 cup brown sugar, packed
1/4 cup egg substitute
2 cups baking mix
1 cup chocolate chips
1 teaspoon vanilla
Directions:
1. Heat oven to 375*. Line a 9 X 13 metal pan with parchment paper, leaving enough overlap to serves as handles.
2. Using a cake mixer on the lowest speed, mix together the butter, brown sugar, vanilla, and egg substitute until well blended.
3. Stir in the baking mix and chocolate chips.
4. Put the dough into the parchment lined pan. Using a sheet of wax paper, use your hands to press the dough to the edges of the pan.
5. Bake 16 minutes or until edges are golden brown. Lift out the cookie bar by the parchment handles and transfer to a wire rack. Cool for 10 minutes.
6. Using parchment handles, put the cookie bar onto a cutting board and trim off the edges of the bar to make a neat rectangle. Cut the bar in to about 48 cookies.
7. Return cookies to rack and cool completely.
