Low-Fat Apple Orange Oat Bran Muffins

These taste SO good, and are very low in fat and full of fiber. An excellent choice for anyone on Weight Watcher's, or if you're trying to eat healthier.
Ingredients:
1 1/2 cups oat bran
1/2 cup whole wheat flour
1/4 cup packed brown sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup buttermilk
1 egg
1 tablespoon grated orange rind
2 tablespoons orange juice
1 peeled and diced apple
1 cup raisins
Directions:
1. In large bowl, combine flour, sugar, oat bran, baking powder and soda, salt and cinnamon.
2. Combine buttermilk, egg, orange rind and juice in a separate bowl.
3. Stir wet ingredients into dry ingredients, mixing just until moistened.
4. Stir in apples and raisins.
5. Spoon into greased muffin tins.
6. Sprinkle with wheat germ.
7. Bake at 400 for 18-20 minutes.
