Low Carb Veggie Beef Soup

My mom made this recipe when we were doing the South Beach Diet. It is very good, you can eat a lot of it, and it is fulfilling!
Ingredients:
1 1/2 lbs lean ground beef
1 (8 ounce) bag frozen chopped onions
1 (28 ounce) can diced tomatoes (drained)
1 (28 ounce) can cut green beans (drained)
1 cup mild salsa
8 ounces fresh mushrooms (sliced)
4 celery ribs (chopped)
1/2 head cabbage (chopped)
3.5 (14 ounce) cans beef broth
salt and pepper
garlic powder
all purpose greek seasoning
Directions:
1. Brown meat with onions in skillet. Sprinkle meat with garlic powder.
2. Put all other ingredients in a large crock pot except salt and pepper.
3. Once meat has browned, add meat to crock pot and stir well. Add salt and pepper to taste.
4. Turn crock pot on high.
5. I let mine cook on high for about 5-6 hours.
6. I add shredded cedar cheese to mine when serving.
