Low Carb Pot Roast

Very low in carbs, from Atkin's diet cookbook.
Ingredients:
3 1/2 lbs roast
1/2 teaspoon garlic powder
1 teaspoon salt
pepper
3 tomatoes, quartered
2 onions, sliced
2 garlic cloves
Directions:
1. Rub seasonings into the roast and chill 30 minutes.
2. Puree tomatoes, onions and garlic in processor.
3. Place roast and pureed sauce in a large pot and simmer 1-1/2 hours.
4. Turn roast and simmer an additional 1-1/2 hours.
5. Slice and serve with sauce.
