Low Carb Pizza Soup With Dried Basil

This soup combines all the flavor of pizza without the high carb content. Of course, if you're not too worried about your carbs, you can add pasta or rice to the soup or a toasted slice of Italian bread under the cheese. Read more . Experiment with ingredients, too. Use sausage instead of pepperoni, etc.
Ingredients:
* 1 tbs. vegetable oil
* 1 onion, finely chopped
* 1/2 cup mushrooms, sliced
* 1/4 cup green bell pepper, thinly sliced
* 1 cup canned tomatoes, undrained
* 1 cup water
* 1 tsp. beef bouillon
* 3 ounces pepperoni, thinly sliced
* 1/2 tsp. dried basil
* 1 cup shredded mozzarella cheese
Directions:
1. Turn on broiler. Heat oil in a heavy nonstick skillet over medium high heat. Sauté next 3 ingredients 3-4 minutes until softened. Add next 5 ingredients and cook just until heated through. Ladle soup into ovenproof bowls and sprinkle with cheese. Broil 1-2 minutes until cheese is bubbly.
