This recipe came from the 1984 World's Fair official cookbook. They are soft in the center (which I love) and contain very little flour. The cottage cheese sounds strange but it works. (And normally, I wouldn't touch the stuff.)
Ingredients:
2 cups low fat cottage cheese
6 eggs, beaten
1/2 teaspoon salt
4 tablespoons butter
1/2 cup flour
Directions:
1. In food processor, process cottage cheese until smooth.
2. Sift flour.
3. Add remaining ingredients and beat until well blended.
