Low Carb Choco Lava Cakes

I'll admit, not quite as good as the real thing, but when you're dieting it's wonderful. Cook an extra couple minutes if you prefer a dry cake.
Ingredients:
4 oz unsweetened baking chocolate
1/2 cup butter
1 1/4 cups powdered sweetener (i use splenda)
2 eggs, lightly beaten (organic & free range)
2 egg yolks
1 t brandy
6 t low carb baking mix (i use a combo of oat flour, soy flour and wheat gluten flour)
homemade unsweetened whipped cream to top
Directions:
1. Preheat oven to 425F
2. Grease 4 custard cups with a little butter
3. In a microwaveable bowl, heat butter and chocolate squares on high for 1 minute or until butter is completely melted
4. Remove bowl from microwave and stir until chocolate is completely melted
5. Stir in sweetener until combined
6. Stir in eggs, yolks and brandy until combined
7. Stir in baking mix until well blended
8. Divide batter evenly between 4 custard cups
9. Bake 10-13 minutes, or until sides are firm but centre is soft.
10. Let stand 1 minute, then turn out onto plate. Top with whipped cream
