Muffins made with no fat or eggs. Adding semolina and almond meal makes them stay moist, as does the apple sauce. You can make your own apple sauce by chopping up apples, and putting in a saucepan with a small amount of water to cover, and simmering for 20 minutes, then mashing or pureeing. No need to take the skins off first.
Ingredients:
1/4 cups flaxseed meal
1/4 cups coconut
1/4 cups almond meal
1/4 cups semolina
2 tbsp chopped walnuts
2 tbsp pumpkin seeds
2 tsp baking powder
1/2 cup apple sauce
1/2 cup yoghurt
Directions:
1. Place first seven ingredients in a bowl and mix well.
2. Add apple sauce and yoghurt and mix well.
3. Put into 12 muffin pans (silicone ones are the best as they don't need to be sprayed with oil)
4. Bake for 20 minutes at 180 degrees - check after 15 minutes to make sure they're not burning.
5. Cool for five minutes before gently squeezing out of the silicon cases.
