Low Calorie Stuffed Peppers with Ground Turkey

Ingredients:
6 bell peppers
1 pound lean ground turkey
1 clove garlic
1/4 cup onion
1 carrot
28 oz canned tomatoes
1 cup cooked brown rice
1 t brown sugar
1/4 t basil
Directions:
1. Clean peppers. Boil for 4 minutes. Rinse in cold water.
2. Cook turkey, garlic, onions and carrots until tender.
3. Add the tomatoes, rice, brown sugar and basil. Cover and simmer for 30 minutes or until the rice is tender.
4. Stuff the peppers. Bake for 15 to 20 minutes at 350 F.
