Low-Calorie, Low-Fat Black Forest Cake (ForĂȘT Noire)

This is a lighter take on a traditional German/European cake. Believe me, I know my desserts, and this tastes great.
Ingredients:
cake
3/4 cups flour
1/4 cup granulated sugar
2 apples (or 1 1/2 cups apple sauce)
3 tbsp unsweetened cocoa powder
2 tsp baking powder
1 tbsp vanilla extract
filling
2 cups fruit cocktail, packed in water (or light syrup if unavailable)
50 g (1/4 cup) cherry brandy or any preferred liquor
icing
250 g (2 cups / 1 box) fat-free coolwhip (1 box)
1 tsp unsweetened cocoa powder
Directions:
1. Cake: Preheat your oven to 350 degrees, and spray two 8 cake pans with non-stick coocking spray. (or use 1 pan with the cake to be cut later)
2. If you're using apple sauce, skip to next paragraph. When you're using full apples, peel, quarter, and remove pits, then add to food processor with a couple of tablespoons of water, until you get apple sauce. Use 1 1/2 cups of this sauce.
3. In a large bowl, mix apple sauce, sugar, and vanilla extract using a handheld electrical mixer until well blended. Then mix cocoa powder until incorporated. Next add the flour, little by little while mixing, until batter is smooth.
4. Pour batter into pans and bake for 20 minutes. You can check if cooking is done when a knife poked at the center of cake comes out clean.
5. Let cakes cool for a few minutes in the pans, then invert them on a wire rack. At this stage, if you've used one pan, after cake has cooled, use a serrated knife to cut cake in two.
6. Filling:
7. Drain fruit cocktail, and reserve the liquids. To these liquids, add 1/4 cup brandy (or non-alcoholic juice if you're so inclined. Put one cake on a serving platter, and brush its upper side with the brandy mix. Then brush the rest of it on the other cake's lower side. (We want the cake to be moist!). Now spread 1/2 cup of coolwhip on each side where you brushed the cakes. Then spread the fruit cocktail on the bottom layer of the cake, and place the upper layer on top.

9. With a spatula, spread the rest of the coolwhip on top and all around the cake, then dust the top with the teaspoon of cocoa powder. Chill for at least an hour, and serve!
