Delicious banana bread with a ribbon of chocolate and walnuts in the center. This recipe is lower in both sugar and fat than the average banana bread.
Ingredients:
3/4 cups all-purpose flour
3/4 cups whole-wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons cinnamon
1/2 cup splenda no calorie
1/3 cup unsweetened applesauce
2 large bananas, mashed
2 eggs, beaten
3/4 cups chopped walnuts
3/4 cups semisweet chocolate chips
Directions:
1. Preheat the oven to 350 degrees F.
2. In a large mixing bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and splenda
3. In a medium mixing bowl, combine the applesauce, bananas, and eggs. When these are well mixed, pour over the dry ingredients and combine, taking care not to over mix the batter (it will be a little lumpy).
4. Spray a loaf pan with light cooking spray and pour half of the batter into the pan. Sprinkle the walnuts and chocolate chips evenly over the batter, and cover with the remaining batter.
5. Bake until a knife inserted into the center of the loaf comes out clean, 45 minutes to 1 hour.
