Only 95 calories a muffin, with all natural ingredients. No Splenda or egg substitute, we CAN be normal!
Ingredients:
1 1/2 cup grated zucchini
1/2 cup unsweetened applesauce
1/4 cup sugar
4 egg whites
1 tsp vanilla
3/4 cup whole wheat flour
3/4 cup all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
3 tablespoon raisins
Directions:
1. Preheat oven to 350, line muffin tin with muffin cups and Spray with PAM or grease with Crisco.
2. 2. Mix all ingredients together, Dry then wet.
3. 3. Fill muffin tins about 2/3 full.
4. 4. Bake for 20 minutes. (Check at 15 minutes! tops should spring back.)
