Low-Cal Vegetarian Vegetable Soup

An extremely low-calorie vegetable soup. Completely vegetarian! Really good served over brown rice.
Ingredients:
2 cups red cabbage, chopped
3 large carrots
1 green bell pepper
3 roma tomatoes
3 small onions
4 stalks celery
5 cloves of garlic
1 cup barley
8 cups of water
Directions:
1. Boil water in large pot.
2. Chop all vegetables, add everything except the onions and garlic to pot.
3. Sautee the onions and garlic, add to pot.
4. Bring to a boil, and let simmer for about half an hour.
5. Remove two cups of soup, puree in a blender, and add back to pot.
6. Season with black pepper, salt, garlic powder, chili pepper, and ground basil leaves.
7. Simmer on low heat for 2 hours.
8. Serving size approximately 1 cup.
