These muffins can easily have other nutrious things addded to them! I sometimes add allspice and a little cinnamon and sugar to the tops of them before baking. If you want, you can use two egg whites in place of one egg.
Ingredients:
2 cups whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup milk
1 egg
1/4 cup canola oil
1/4 cup sugar
1 1/2 cup chopped apples
1/4 cup chopped pecans
Directions:
1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease one 12-cup muffin tin.
2. Lightly beat egg whites.
3. In a separate bowl mix dry ingredients thoroughly.
4. In a separate bowl, mix remaining ingredients.
5. Gently fold in egg white.
6. Add to the dry ingredients.
7. Stir until barely moistened. Batter will be lumpy.
8. Fill greased muffin tins two-thirds full. Bake about 20 minutes until lightly browned.
