Low Cal Apple-Cinnamon Muffins

Great tasting muffins! Try adding different fruits to batter for yummy low cal breakfast or snack!
Ingredients:
2 cup flour, all purpose nonbleached
2 tbsp baking powder
1 tsp baking powder
1/8 tsp salt
1/2 cup sugar
1/2 cup applesauce
2 eggs
1 tsp vanilla extract
2 apples, red peeled and chopped
2 tbsp cinnamon
Directions:
1. Preheat oven to 350F
2. Peel and chop apples into small pieces
3. Mix all ingredients into a mixing bowl and mix well
4. Using paper baking cups, or a rubber cooking pan, add batter the muffin cups.
5. Bake for 20-25 minutes.
