A one-pot meal. Very filling and nutritious. Virtually fat-free. (Much tastier than you might think!) Without chicken broth it is a great vegan meal!
Ingredients:
1/4 cup dry lentils
1/4 cup black beans
1 1/2 cup onion, chopped
1 cup spinach, chopped
2 cup low-sodium chicken broth
Directions:
1. Cook lentils in a sauce-pot until soft
2. Chop onion and spinach. Drain beans.
3. When lentils are cooked, add chicken broth and let heat again.
4. Add vegetables and beans, stir and serve.
