lovely lower fat cheese spinach quiche |
(i have tweaked this recipe for less fat) |
1 cup sliced mushrooms |
1 cup chopped onion |
1 (10 ounce) package frozen chopped spinach, thawed, drained well |
1/3 cup low fat milk |
4 eggs |
1 cup low fat shredded mozzarella cheese |
1 (9 inch) frozen prepared pie shell |
1/4 cup oscar mayer low fat real bacon bits (optional) |
seasonings (optional) |
preheat oven to 375 degrees f. |
spray nonstick skillet with cooking spray. |
add mushrooms and onion; cook 5 min. or until tender. |
stir in spinach; mix well. |
add seasoning, (if needed) |
mix milk and eggs until well blended. |
add spinach mixture and cheese. |
pour into pie shell; sprinkle with bacon bits. |
bake 50 min. or until set and golden. |
