Lovely Light Summer Squash Soup

Ingredients:
4 large yellow squash cut up
1 green bell pepper cut up
1 white onion cut up
2 cloves garlic peeled
1 cup celery cut up
4 cups water, chicken broth or vegetable broth
1 cup sour cream or yogurt
1 tbs walnut oil ( or extra virgin olive oil )
1 tsp curry powder or to taste
1 tbs salt or to taste
pepper top taste
1/2 tsp powdered corriander or to taste
garnish: chopped chives, chopped tortilla or nacho chips
Directions:
1. Place all the vegetables except seasonings and oil and sour cream in a stockpot.
2. Cover with the water
3. Cook until vegetables are tender
4. Cool and hand blend or put in a blender in batches to puree.
5. Whisk in the sour cream
6. Add seasonings to taste
7. Garnish each bowl with crushed tortilla chips and chopped chives.
8. Serve hot or chilled.
9. Either way its quite fine.
