Another great recipe from my friend Donna! Something different for us asparagus lovers. Cook time is chill time. (3hours)
Ingredients:
1 12-once package frozen, cut michigan asparagus
1 cup chopped, seeded tomatoes
1/2 cup finely chopped onions
1 garlic clove, minced
2 tablespoons chopped fresh cilantro
3 tablespoons finely chopped jalapenos
1 5.5-ounce can tomato juice
1 teaspoon salt
1 teaspoon cider vinegar
Directions:
1. Partially thaw Michigan Asparagus and chop.
2. Combine all ingredients.
3. Cover and chill thoroughly, about 3 hours.
