Louisiana Style Greens And Sausage

An easy, tasty side with a little kick, depending on the sausage, you use. I like to add other greens, I find in the fridge, like chard or red beet greens.
Ingredients:
1 tb olive oil
1 onion, diced not to fine
8 oz. andouille sausage
1 lb. (1 bag ) southern greens blend ( i used trader joe's with mustard, turnip, collards and spinach )
2 cups chicken broth

Directions:
1. In a big pot, over medium heat, cook onion in olive oil until soft. Add the sausage and cook for a couple more minutes. Add the greens and the broth and simmer gently over low heat for 30 min., until the greens are tender. Season and serve at once. We had Chipotle - honey glazed sweet potatoes and some pork chop with it.
