LOUISIANA POTATO SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Tomlinson Estate in Fort Worth, Texas in 1992.
Ingredients:
2 pounds red potatoes cubed and cooked
1 cup zesty italian dressing
1/2 teaspoon paprika
1/2 teaspoon ground red pepper
8 slices of thick cut bacon cut into 1 inch pieces
3 green onions chopped
2 stalks celery thinly sliced
1 red pepper or yellow pepper chopped
Directions:
1. Mix potatoes, dressing and seasonings in large bowl and set aside.
2. Cook bacon in skillet to desired crispness then remove bacon from skillet.
3. Reserve 1 tablespoon drippings in skillet and drain bacon on paper towels.
4. Add onions, pepper and celery to drippings in skillet then cook and stir until crisp tender.
5. Add to potato mixture with crumbled bacon and mix lightly.
