Loris Killer Chicken Salad

IF you are still poaching chicken for salad, you are missing out! What makes this chicken salad unique is the way the chicken is prepared, and it is flavor-packed! And it is ADDICTIVE! Disappears before you know it. Read more ...great in a wrap, on a croissant, on triscuits, or standing at the open fridge with a spoon!! Make the night before, it's worth it when the flavors have married the next day.
Ingredients:
about 3 lbs chicken, i use b/s breasts most of the time
olive oil
2 t margarine
2 t. chopped garlic
seasoned salt
garlic pepper
mccormick's citrus grill seasoning
1/2 a lime
1/2 a lemon
2 gala apples, chopped - i put the chopped apples into pineapple juice while i chop everything else to keep them from tunring brown, you can also squeeze lemon juice over them.
1/2 med. white onion, chopped
1 large bunch, large, ripe, green grapes - sliced in half, lengthwise
1/2 small package sliced almonds
1 small can mandarin oranges, drained well and patted dry (optional)
dukes mayo
sour cream
** sometimes i stir in some orange zest, or a combination of orange, lemon and lime zest - when i think of it.
Directions:
1. Drizzle Olive Oil in large skillet with 2 T margarine
2. Add chicken, frozen or thawed
3. Season both sides of chicken with seasoned salt, garlic pepper and citrus grill.
4. Brown chicken on each side, then turn skillet to low and allow to cook until done (20 minutes or so if frozen).
5. While chicken is cooking, squeeze lime and lemon over each side
6. When cooked through, remove from heat andlay on paper towel lined plate, place in fridge to cool.
7. Cut chicken into bite sized pieces and put in large mixing bowl
8. Add apples, onion, grapes, and almonds,
9. Add mayo and sour cream a little at a time until desired consistency (May also use vanilla yogurt for a healthier option)
10. Stir in almonds

12. My mom can't eat apples anymore, so, I add mandarin oranges when I fix it for her...drain well and pat dry...no need to chop as they fall apart when mixing...they hold water though, and make for a slightly runnier salad.
13. Serve as salad, in a wrap, on great bread for sandwiches
