Ingredients:
1/4 cup honey
1/2 teaspoon lemon rind (grated)
2 tablespoons soy sauce
1 tablespoon dijon mustard
1 tablespoon lemon juice
2 teaspoons canola oil
1 cup onion (minced)
1 cup green pepper (minced)
2 garlic cloves (minced)
1 1/2 lbs ground chicken
1/2 cup breadcrumbs
1/2 cup zucchini (shredded)
1/2 teaspoon salt
1/2 teaspoon lemon rind (grated)
1/4 teaspoon fresh cracked pepper
2 teaspoons dijon mustard
2 teaspoons lemon juice
1 teaspoon soy sauce
Directions:
1. Heat oven 400.
2. Whisk together the honey, rind, soy sauce, dijon and juice. Set aside.
3. Heat oil in a skillet.
4. Add onion, pepper and garlic. Saute 3 minutes.
5. Add chicken. Saute 5 minutes. Remove from heat. Let cool.
6. Stir in the breadcrumbs, zucchini, salt, rind, pepper, dijon, juice and soy sauce.
7. Shape into 1/2 inch balls.
8. Place on a sprayed baking sheet. Bake 20 minutes or until golden. Pour sauce over. Stir to coat.
9. Bake 5-10 more minutes.
