Lord's Acre Potato Salad

This is the traditional potato salad we serve at our church's Lord's Acre Day dinner.
Ingredients:
180 lbs potatoes
10 lbs onions
18 dozen eggs (hard boiled)
1 gallon mayonnaise (miracle whip)
2 1/2 gallons pickles (curry pickle maxine's curry pickle (a sweet pickle))
9 lbs sugar
2 1/2 quarts vinegar
salt
celery seed
Directions:
1. Peel and dice potatoes, keeping in water so they do not turn brown.
2. Peel and dice onions.
3. Boil potatoes until just tender.
4. Refrigerate onions.
5. Refrigerate potatoes.
6. Next day make hard boiled eggs, and dice.
7. Combine all ingredients, adjusting seasonings to taste.
8. Refrigerate overnight.
9. Serve.
