Adaptation of a Maid Rite. While we never had Maid Rites in Florida, nor did we have loose meat sandwiches We learned about them on Roseanne's old show. Our school lunchrooms served something called Potato Turbate and I think it was the same meat filling used as a topping on the mashed potatoes. Read more . You either loved it or hated it as a kid. Count me in on the loved it as comfort food side.
Ingredients:
1 pound ground beef, i use a ground chuck 80/20
1/2 teaspoon salt
3-4 dashes finely ground black pepper
1/2 half of a yellow onion, minced so fine, it is nearly juiced
1 generous squeeze of yellow mustard
1 dash of worchestershire sauce
1/4 cup of beer
4 plain hamburger buns
dill pickle slices
or alternately some really lumpy mashed potatoes
Directions:
1. Saute the ground beef, constantly working on breaking up the pieces until it is in very small pieces. Drain off the excess fat.
2. Add seasonings, and continue to cook over low heat until the beer and liquid is reduced to near nothing. (I'm sure they didn't cook with beer in the Pinellas County School system, I added it because I liked the flavor it added to the beef.)
3. Serve on a bun, topped with a dill pickle slice, more mustard if desired.
4. Alternately, serve over a pile of mashed potatoes and a side dish of peas is a must!
5. ***Seconds count-especially when dieting***
