Lola Richard's Easy Potato Salad

Easy Potato Salad? You betcha. I used to slave over potato salad - slicing and dicing for way too long. My DH ate it faithfully. Then one day he said I wish you would make my Mom's potato salad - you're working way too hard on this. He gave me the recipe from memory as his Mother had passed away some years ago. Thanks to Lola, we can have potato salad in 30 minutes.
Ingredients:
4 -6 medium potatoes, cooked and cooled (with or without the skins)
3 -4 hard-boiled eggs, cooled
1/4 cup onion, finely diced (any kind)
1/4 cup sweet pickle, finely chopped
1/2 cup mayonnaise (or more if too dry)
1 teaspoon prepared yellow mustard
salt and pepper
Directions:
1. Quarter the potatoes and eggs and put them in a large bowl. Mash them with a potato masher to a course consistancy. Add the onion, sweet pickles, mayo and yellow mustard and stir to combine. Add salt and pepper to taste.
2. Sometimes I add a little finely diced cucumber if I have it. Sweet pickle relish (drained) can be substituted for the diced sweet pickles.
