Lobster Whole Wheat Macaroni and Cheese

A decadent twist on comfort food.
Ingredients:
2 cups whole wheat macaroni, cooked and drained
1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon spicy brown mustard
2 cups skim milk
1 1/2 cups cheddar cheese, shredded
1 (14 ounce) can diced tomatoes, drained
7 ounces cooked lobster meat, finely chopped
1/4 cup gruyere cheese, grated
Directions:
1. Melt the butter in a large sauce pan.
2. Blend in the flour.
3. Add salt, pepper, and mustard.
4. Stir in the milk gradually; cook until thickened.
5. Add the cheddar cheese; stir until melted.
6. Add lobster and tomatoes.
7. Add the macaroni, mixing well.
8. Pour into a greased 2-qt baking dish.
9. Top with gruyere cheese.
10. Bake at 375 for 1/2 an hour.
