Lobster Thermidor

One of the best and simplest recipes out there.
Ingredients:
2 (675 g) cooked lobsters
25 g butter
1 tablespoon plain flour
150 ml double cream
300 ml fish stock
salt
half a teaspoon paprika
1 pinch cayenne
50 g grated parmesan cheese
50 g fresh breadcrumbs
Directions:
1. Cut the lobsters in half length ways with a sharp knife and remove stomach sac and intestinal vein.
2. Remove the flesh from the body and legs and chop into 12 mm pieces.
3. Melt the butter in a saucepan and when frothy, stir in flour and cook for 1 minute.
4. Gradually add the cream and stock, stirring constantly over gentle heat until well combined.
5. Add the lobster flesh, Half of the Parmesan, salt, paprika and cayenne and simmer for 10 minutes stirring frequently. Remove the heat.
6. Preheat the grill. Wash and dry the lobster shells, place on the grill pan then fill with the lobster with flesh and sauce.
7. Mix together the breadcrumbs and remaining Parmesan , sprinkle over top of the lobster halves and grill for 10 minutes. Serve immediately.
